
This is a delicious creamy vegan pudding. It tastes just like the real thing but is made with tofu. It also takes just seconds to make and requires no cooking time.
1/2 cup soft tofu
3 tbsp cocoa powder
2 tbsp agave (or to taste)
1/4 tsp guar gum
Put all ingredients into a blender and blend until smooth.
Pour into cups and allow to sit for a few minutes. This will activate the guar gum and make it thick.
Serve immediately or chill.
Makes one or two servings.
The time needed to cook this recipe is under 30 minutes.

I’ve been making this for months now. Except I use chia seeds instead of guar gum.
It tastes great with a fruit thrown in too: banana, mango, strawberries make for a great high-protein fruit pudding!

Thanks Sasha. I bet chia seeds would add a great texture too! Fruit does taste great with it, I had mine with cherries.
